After traveling to New York, Boston and Maine this past week I’m excited to be on my way home. I can’t wait to get settled back into my daily routine. I hope all of you enjoyed following my instagram madness throughout the trip. If you missed the pictures, pop over here!


I can’t believe that we’re about to say farewell to June – it has been pretty spectacular and I’m sad to say goodbye. July brings on fun adventures – like taking a trip to Tahoe with friends. But this weekend will be spent enjoying time at home, rising up early to go to the flea market and unpacking the treasures I picked up from my trip. What are you up to this weekend? Whatever is on the agenda I hope it’s a fabulous one!

I’m Loving . . .

A low knot bun in the hot east coast weather.

This one page guide to Maine was fun to come across before my adventure, which has so far been amazing (wishing I could have a summer home here).
Beautiful spaces that have unspoken beauty.
Mornings spent enjoying warm cups of tea.
Natural makeup.
Escaping on vacation in a tent step up like this one.
And lastly, the fact that my favorite fruit is finally in season. I could eat strawberries all day long, especially these little tiny ones.

On the Menu: Beet and Potato Chips w/ Thyme Rock Salt

Lately, I’ve been obsessed with kale chips – I have them with me in my purse constantly in case I need a quick snack. But of course Eric isn’t the biggest fan. He suggested we look for a potato chip recipe and when I came stumbling across this beet and potato chip recipe on Sips and Spoonfuls I knew it would be a perfect combination. We’re going to be making them this weekend for our 4th of July trip of to Lake Tahoe. I think they’ll be a great snack for everyone to munch on.


Bon appetit everyone!


Ingredients:

Beets
Potatoes
Himalayan sea salt
Fresh thyme leaves
Oil for deep frying (canola or sunflower oil)


Directions:

Wash and dry the beets and potatoes. Finely slice with a mandolin. Make sure the slices are dry. Heat oil in a frying pan on high heat. When the oil is hot, add the beet and potato slices one at a time so they don’t stick to one another. Don’t overcrowd the oil. Fry, stirring every so often until they are crispy. Drain on a paper towel and immediately sprinkle with thyme salt. Serve when it cools down.

To make thyme salt, grind Himalayan sea salt with thyme leaves in a pestle and mortar.

Notes: Beets will shrink when fried so you are better off using larger beets. I left the skin on beets and potatoes but that is personal preference.

a brand new week . . .

Monday is here and I’m excited for an action packed day. This weekend I got inspired by walking the streets of Brooklyn, Nolita and the West Village – there is just entirely too much to see and do here. The brick brownstone house streets were darling to walk down as I wandered into stores like Haus Interiors and John Derian. I especially loved meeting up with old and new friends for delicious meals – Colonie in Brooklyn was a particular favorite of mine. It was all around an amazing weekend spent in New York (despite the heat factor). Today I’ll be running around to meetings all across the city and hoping to pop into a museum along the way.


Also, thank you so much for all of the comments and emails about the new design. It makes my heart sing that you all love it as much as I do.
