On the Menu: Lavender Granola

Breakfast is one of the hardest meals for me to take the time to make and eat. This past fall Eric and I started making our own homemade granola – it’s easy and you can put whatever you love in it. But I found that making it made me see all of the sugar that went into it. That’s when I turned to Susan of Peas and Love for a new and healthier version of what I was making. This delicious Lavender Granola is a burst of spring in your mouth and topped with some berries it makes my heart sing. Hope you enjoy this as much as Susan and I did last Saturday!

Lavender Granola

Ingredients:

2 cups Oats
1/4 cup Flax Seeds
3/4 Nuts of choice or mix them all! (A mix of almonds, cashews, sunflower seeds and pumpkin seeds)
1 tsp Vanilla
4 Tbsp Honey
1 Tbsp Lavender Buds

Directions:
Preheat oven to 350 degrees. In a bowl, bring all ingredients together and mix well. Spread evenly on a baking sheet and bake for 40-45 minutes until golden, dry and toasty. Let cool, then transfer to a mason jar to store. Serve over yogurt and top with fresh berries and a drizzle of honey.

Oh my goodness – this looks absolutely delicious! Can’t wait to make it for myself. One question, though – are lavender buds hard to come by?
